Por lo que aprovechando que comenzó la temporada de citrícos, nada mejor que un bundt cake de mandarina y como licor estaba entre el Grand Marnier y el Cointreau, y el sabor del Grand Marnier es más delicado, más suave, me parecía que le iba mejor.
Ingredientes
5 huevos
250g de azúcar
2 mandarinas
125g yoghurt natural
100g de aceite
250g de harina
12g de polvo de hornear
1 pizca de sal
2 Tbsp de licor Grand Marnier
ralladura de las dos mandarinas
ralladura de medio limón
azúcar glas para decorar
Precalentar el horno a 180ºC. Engrasar con mantequilla el molde.
Triturar las dos mandarinas.
Batir los huevos e ir incorporando el azúcar poco a poco, si la ponemos de golpe, nos llevará más tiempo . Batir por aproximadamente 5 o 7 minutos, incorporar las mandarinas trituradas, el aceite y el yoghurt. Continuar batiendo por un minuto.
Tamizar la harina con el polvo de hornear y una pizca de sal.
Incorporar poco a poco la harina con movimientos envolventes. Por último incorporar el licor y las ralladuras.
Verter la masa en el molde y dar unos golpecitos para que se asiente.
Hornear 30 minutos a 180º y luego 10 minutos más a 170ºC.
Sacar del horno, dejar enfriar 10 minutos y desmoldar sobre una rejilla.
Cuando esté frío espolvorear con azúcar glas.

125g natural yoghurt
250g all purpose flour
100g oil
12g baking powder
pinch of salt
2 Tbsp Grand Marnier liqueur
zest of the tangerines
zest of half a lemon
icing sugar to decorate
Preheat oven to 180ºC, Grease bundt cake as usual. Crush the tangerines.
Beat the eggs and and incorporate the sugar gradually, you will need to beat for a while, 6 minute. Then add the crushed tangerine, oil and the yoghurt. Continue beating for a minute.
Pour the batter in the pan and give it a tap to settle.
Bake for 30 minutes at 180ºC and then 10 minutes more at 170ºC.
Remove from the oven, let cool down 10 minutes and unmold on a wire rack.
Let cool completely and sprinkle icing sugar to decorate.
